Spicy Korean Slaw

Cabbage

What You Need:

 

2 lbs. red and/or green cabbage, sliced  

½ medium sweet onion, sliced thinly

3 scallions, chopped

¼ cup cilantro, chopped

3 cloves garlic, minced

2 medium carrots, shredded

2 Tbsp soy sauce

1 Tbsp sesame oil

¼ cup rice vinegar (or to taste)

½ tsp crushed or powdered red pepper (I use Korean red pepper to taste--start small.)

2 Tbsp sugar

1 Tbsp sesame seeds (optional)

Salt and pepper to taste

 

What You Do:

 

  1. Combine cabbage, onion, scallion, carrots, cilantro, and garlic in a large bowl.  

  2. In a separate bowl, mix together all the wet ingredients and sugar.  

  3. Sprinkle the red pepper on the dry ingredients.  

  4. Pour the wet ingredients on the dry and mix thoroughly.  

  5. Add salt and pepper to taste.

  6. Sprinkle each serving with sesame seeds, if desired.

 

This slaw tastes even better the second day.  You can make the dressing ahead of time to bring out the flavor.
